The science that scrutinizes substance is named chemistry. It was born out of alchemy, an old science that studied, among other things, to create the elixir of life and do gold from iron. Today chemistry simply studies the components of various matters, their molecular levels and the reactions that occur while various matters are being combined. It is also very necessary to detect the laws to have the possibility to create the needed matters from other ones.
